I never planned on posting recipes to my blog, not because I don’t like to eat BUT because I don’t like to cook.
We have already established that I love cookies here.
I decided I needed to share this recipe for my Buffalo Chicken Wrap because it is so good. I had originally found a recipe on Pinterest called Buffalo Chicken Tacos. I made them following this recipe from Mrs.Regueiro’s Plate and they were delish!
I wanted to make a healthier version AND they rocked too!
Buffalo Chicken Wrap:
Boneless, Skinless Chicken Breast
Franks Hot Sauce
Avocado or guacamole (I prefer fresh chopped but the other is great when you have it in the fridge)
Crumbled Blue Cheese, Ranch Dressing **Optional but will add calories
First, pan sear chicken in coconut oil. **Tip: Covering with a lid while simmering makes really tender chicken. While the chicken cooks you can chop the cilantro, onions and avocado. After the chicken has finished cooking cover it with the Franks Hot Sauce. It is pretty spicy, which I love, but you can decide how much hot sauce to add.
Then it’s a matter of putting it all together. The Romaine lettuce works as your wrap. Just fill it with all the ingredients and enjoy. It is Super easy to make and very yummy! This Buffalo Chicken Wrap is my husbands favorite.
I hope you enjoy these Buffalo Chicken Wraps as much as we do. I have tried a few other recipes from Pinterest, have you?
What’s your favorite? Please share, I’d love to try some other recipes.
You never know I just might post them here!
